Epicurean Banana Crusted Sole on Baby Greens
Ingredients:- ½ cup Panko Bread Crumbs
- 2 ½ tbsp. (2/3 ounce) Banana Epicurean Dust
- 2 whole eggs
- 2 3-4 ounce Fresh Sole Fillets
- 1 cup Baby Greens
- Mix Panko and Banana Epicurean Dust in small bowl.
- Beat 2 eggs in a separate bowl.
- Pat fresh fillets dry then dip in the egg wash and then in the panko mixture.
- Cook in a hot skillet for 3-4 minutes on each side until light golden brown.
- Diagonally slice sole filet and place on a bed of fresh micro greens.
Epicurean Banana Dressing
Ingredients:- 1 ¾ cups plain yogurt
- 2 ½ tbsp. (2/3 ounce) Banana Epicurean Dust
- 1/8 cup honey
- ½ tsp. Vanilla extract
- ¼ tsp. Freshly grated ginger
