Epicurean Banana Crusted Sole on Baby Greens

Ingredients:
  • ½ cup Panko Bread Crumbs
  • 2 ½ tbsp. (2/3 ounce) Banana Epicurean Dust
  • 2 whole eggs
  • 2 3-4 ounce Fresh Sole Fillets
  • 1 cup Baby Greens
  1. Mix Panko and Banana Epicurean Dust in small bowl.
  2. Beat 2 eggs in a separate bowl.
  3. Pat fresh fillets dry then dip in the egg wash and then in the panko mixture.
  4. Cook in a hot skillet for 3-4 minutes on each side until light golden brown.
  5. Diagonally slice sole filet and place on a bed of fresh micro greens.
Serve with Epicurean Banana Dressing

Epicurean Banana Dressing

Ingredients:
  • 1 ¾ cups plain yogurt
  • 2 ½ tbsp. (2/3 ounce) Banana Epicurean Dust
  • 1/8 cup honey
  • ½ tsp. Vanilla extract
  • ¼ tsp. Freshly grated ginger
Combine all ingredients in bowl. Place in a nonmetallic container in the refrigerator. Can be stored for two days.
